Tasting Notes
The 2007 Cabernet is a great example of what perfect growing conditions have to offer!
Inky deep purple in color, the nose shows cassis, graphite, plum and blackberry preserve with slightly smoky French oak overtones. The wine is plush and thick on the palate giving an impression of sweetness, yet it is fermented completely dry. Elements of blackberry, black cherry and framboise are supported by fine grain tannins in the finish. Fun to drink now but cellaring this wine will be rewarding.
